My favorite cheese from the Nettle Meadow line (at this moment at least); a cow's milk triple creme made with a splash of apple brandy, which is introduced to the milk itself, rather than being used as a wash. The result is a direct translation of the brandy's delicate and tantalizing sweetness, complimented by the cheese's rich texture. And it isn't *too much* brandy.
