The perfect embodiment of Springtime, Shepherd’s Hope is an fresh sheep’s milk cheese from the good people at Shepherd’s Way Farms in Minnesota. Delicate curds are pressed into wheels, then lightly salted before getting packaged for sale. To me, it’s the feeling you get in early April when the air is still cold but the sun in warm, and each day has a little more sunlight. This cheese will come wrapped in plastic wrap, and should not be exposed to air when kept in your fridge.
